A tofu strainer is a tool used to drain and press tofu in order to remove excess water and improve its texture. It consists of a perforated basket and a top plate, for pushing down on the tofu to extract liquid efficiently.
To use the strainer for tofu, simply place the block of tofu inside the basket, place the lid on top, place a weight such as a can on top, and let the excess liquid drain out. The result is firmer and denser tofu that is better suited for frying, grilling, or adding to stir-fries and soups. Tofu strainers are essential for anyone who regularly cooks with tofu and wants to achieve the best possible texture and flavour in their dishes.
To use to strain Yoghurt place the cloth in the base first, then spoon in the yoghurt, fold the edge of the cloth over the top of the yoghurt. Place the lid on top then add weight such as a can of beans to give some extra pressure.
Leaving to drain overnight gives a thick cheese like texture, in a neat block shape.
