The cultures are very robust and can survive at room temperature, for an extended time. It is advised that they be kept in the freezer to extend the life of the cultures.
There is a small amount of dried organic skim milk powder present. When making non-dairy sour cream, all the milk powder from the starter is completely consumed by the bacteria during fermentation. The sour cream you make will be lactose free.
